Spring Cocktails: Pimms No. 1

No one can argue that Pimms No. 1 has withstood the test of time. It has been around since the early 1800s and recently experienced a comeback in the bars. When I was bartending it was just another one of those bottles that collected dust on the shelf. Rarely would anyone ever ask to drink it. More people were likely to ask, "Does anyone ever drink that?" Although bartenders across the country are now working Pimms. No 1 into their mixology recipes, it's still not a bottle that people are regularly buying during their market runs as they do beer, wine, vodka, and tequila. Pimms No. 1 is gin based and chock full of herbal and citrus flavors but in the most mellow way possible. It tastes good on the rocks, with lemonade like the British like it, mixed with more gin, and mixed with dry chardonnay. We love it combined with bubbly and a splash of a few other ingredients. Here's a recipe to try the next time you bring home a bottle. Just make sure that it doesn't collect dust.

Pimms cocktail with bubbly and raspberries

Pimms Prosecco Cocktail

Pimms Summer Night
2 ounces Pimms No. 1
3 ounces prosecco
1/2 ounce Chambord liqueur
1/2 ounce This Girl Walks Into a Bar Margarita Mix

Directions
Fill a martini shaker with ice and add the Margarita mix, Pimms, and Chambord. Shake well to mix then strain into a flute or coupe. Top with bubbly and garnish with raspberries.
