This summer cocktail recipe will take you about 15 minutes to make at the most (I'd say ten but I don't want you to rush and chop off your hand). Make sure your pineapple is very ripe so that it's extremely juicy. You'll also need limes, mint, and sugar. This mojito recipe is untraditional in that I don't add any soda water. Of course you can add it if you'd like- just do so in each individual glass instead of the pitcher. Pineapple Mojito Cocktail Recipe ½ bottle of white rum 1 whole pineapple 5 limes 1 package of mint ¼ - ½ cup organic sugar

Directions: Cut off the sides and ends of the pineapple, then slice into ½-inch discs. Add to the pitcher. Slice the limes and separate into two piles. In a separate measuring pitcher, muddle the rum, half of the mint, half of the limes, and sugar until the sugar has dissolved. Strain into the pitcher with the pineapple, then add the remaining limes and mint. Chill until cold and serve.
